With the increase of maturity and the decrease of amylase activity, the invertase activity, protein content and extracellular osmolality increased. Cellulase activity was not measured throughout maturation. Among the pears harvested in phases, late-harvested fruits accelerated ethylene production and respiration more quickly than earlier harvested fruits. In the mature fruit of the tree, no accumulation of ethylene was detected, and it is possible that the pear ripening in the tree does not require the triggering of ethylene. Different harvesting dates have a significant impact on the incidence of black pear heart disease, the incidence of early plucking black heart disease is much lower than late harvest. There is no obvious relationship between the storage time and post-harvest temperature. This may be related to the accumulation of some substances that cause increased susceptibility to black heart disease in pear trees during maturation.
