菠菜又叫菠斯菜、菠棱、赤根菜、鹦鹉菜、角菜、鼠根菜,还有人称它为“红嘴绿茑哥”,这是因为有些菠菜品种茎红叶绿,长相俏丽而得名。据古书记载,菠菜是在唐朝时传入中国的,至今已有1300多年的历史。由于菠菜细胞内原生质胶着度比较大,具有耐低温的特点,因此成为冬春低温季节的绿叶蔬菜之一。现在由于园艺设施的改进,栽培技术的提高,菠菜的新品种也不断出现,一年内可多次种植,已成为寻常百姓餐桌上随时可吃的蔬菜。其食法简便,经济实惠,营养丰富且可药用。
