通过对多所大学餐厅购买环境、食品安全卫生状况的调查,并结合对各个饮品摊位及餐饮窗口的综合分析,发现存在使用及使用空间不灵活、菜品单一、食品不够安全卫生、油烟味过大等一些问题及弊端需要改进。针对这些问题点,并结合现今节能环保的设计理念,使用集装箱来建造校园环境下的餐厅可以成为一种新的设计方向,它抗压、抗震、防风、防火、廉价,省时省力,绿色环保,灵活多变,移动方便,空间适中,低碳、环保。结合问题点及现今设计理念,使用集装箱来建造校园环境下的餐厅,经过重新调整改造,为师生提供一个良好的就餐环境,打造一个全新的校园餐厅安全卫生管理模式是可行之举。
By investigating the environment, food safety and hygiene status of many university restaurants, combined with a comprehensive analysis of each beverage stall and catering window, it was found that there was inflexible use and use of space, foods were not uniform, food was not safe enough, and the smell of oil smoke was too great. Some problems and drawbacks need to be improved. In response to these problems, combined with the current energy conservation and environmental protection design concepts, the use of containers to build restaurants in a campus environment can be a new design direction. With the combination of problem points and current design concepts, the use of containers to build restaurants in the campus environment has been re-adjusted to provide a good dining environment for teachers and students, and it is feasible to create a new campus restaurant safety and health management model.
