也许人们不曾想到,因为吃了两根香肠或是一碗剩菜,会使亚硝酸盐摄入量陡然增高,并埋下隐患。卫生部食品卫生监督检验所副研究员杨惠芬提醒读者,目前90%以上的癌症被认为与接触致癌化学物有关。亚硝胺是公认的强致癌物,而胺与亚硝酸盐在人体内和环境中都极易合成亚硝胺。因此,避免亚硝胺摄入,必须从控制它的前期物质亚硝酸盐开始。
