麻辣子鸡,汉族特色名菜,属湘菜系。此菜品颜色金黄,芡汁油亮,外焦里嫩,味道麻辣、香、咸、鲜,尤以长沙百年老店玉楼东酒家最负盛名。清末曾国藩之孙曾广钩曾登楼用膳,留下脍炙人口的“麻辣子鸡汤泡肚,令人常忆玉楼东”的诗句。后经长沙市滞湘酒家的厨师精工细作,味道更佳。民间又流传有这样一首打油诗:“外焦内嫩麻辣鸡,色泽金黄味道新,若问酒家何处好,滞湘胜过玉楼东。”湖南气候潮湿,易患风湿症,因而湖南人形成了爱吃辣椒、生姜的习惯。麻辣子鸡这道名菜,充分体现了湖南的地方特点。
