Effect of temperature_fluctuation on quality changes of red drum (Sciaenops ocellatus) in cold chain

  To study the effect of temperature fluctuation on the quality change of red drum,four different cold chain logistics were designed,which were included cold store and transportation,sales and consumption some quality indexes (whiteness,sensory evaluation),physical index (weight loss) and biochemical indicators (pH value,content of associates and TVB-N content,K value,soluble protein and APC) were analyzed.It was shown that the quality of red drum was deteriorated in the cold chain logistics,the temperature fluctuation during storage was conducive to microbial growth,accelerated the decomposition rate of protein and degradation rate of ATP,increased the weight loss and TVB-N content,decreased the sensory quality of red drum.TBA in this experiment change is small.Thus,temperature fluctuations and larger fluctuation frequency can accelerate protein degradation,microbial growth and breeding,break the muscle tissue structure,make significantly adverse impact on the quality of red drum.
