马铃薯(Solanum tuberosum)块茎中含有丰富的碳水化合物,具有很高的营养价值和药用价值,其中淀粉是马铃薯块茎中的主要贮藏物质,淀粉含量是评价马铃薯品质优劣的重要指标之一.抗性淀粉(Resistance Starch,RS)是不被健康人体小肠吸收的淀粉及其水解物的总称,具有增加肠胃蠕动,降低餐后血糖浓度,减少心脏病发生频率等有重要的保健功能和医疗作用.
