Five strains of Saccharomyces cerevisiae TISTR were investigated for their ability to bind 10 μg/ml aflatoxin B1.The result shows that the binding percentages of strains TISTR 5337, TISTR 5094, TISTR 5047, TISTR 5278 and TISTR 5013 were 84.70%, 78.06%, 77.66%, 76.52% and 25.95%, respectively.When strain TISTR 5337 was either treated with 2 M HC1 for 60 minutes or autoclaved (120℃ 20 minute) before testing with 40μg/ml of aflatoxin B1, it was found that the binding percentages of untreated yeast and yeast treated with acid or heat were 56.48%, 57.76% and 59.55%, respectively.When strain TISTR 5337 was further used as the dried yeast cells or immobilized yeast cells with chitosan, the result indicates that efficiency of aflatoxin binding by both forms of yeasts in rice and corn was more than 75%.However, the binding ability of immobilized yeast cells was significantly higher than dried yeast cells.
