The paper was designed to research microbial inactivation and inactivation kinetics of bacteria in low temperature sausage under dense phase CO2 with different pressures,treatment temperatures and exposure times.Low temperature sausage was prepared and then was treated by dense phase CO2,the survival curves was determined by the log linear regression plot of the reduced bacteria numbers compared to exposure time,the D value and Z value were calculated through survival curves.The Linear,Weibull and Log-Logistic model were used to fit the survival curves,respectively.
