自然界环境中的天然食品,无论是动物性食品,还是植物性食品,除了含有人体每日必需的各种营养素外,也含有一些非营养素类物质。这些物质一部分是动植物在生长过程中本身所带有的天然成分,另一部分则是动植物在生长过程中来自于外界环境的各种污染物。这其中的有些物质能够干扰动植物食品中某些营养素被人体的吸收、利用,并对人体健康带来一定的危害作用。常见的存在于动植物性食品中的降低营养素吸收、利用的物质主要有以下这些:
