为进行强化面粉人体营养改善效果观察 ,对河北省围场县 6 0 0名农村妇女和甘肃省兰州郊区 5 74名农村妇女进行了营养状况和膳食情况调查。体结果表明 ,受试者一般状况良好 ,河北省农村妇女超重和肥胖的发生率为 2 8 1%和 8 2 % ,甘肃省为 31 5 %和 8 2 %。两组受试者奶类及奶制品、豆类及豆制品、鱼虾类和蔬菜的摄入量均低于中国居民平衡膳食的建议量 ,并存在着不同程度的微量营养素摄入不足。河北和甘肃农村妇女贫血发生率为13 8%和 2 3 4 % ,血清锌低于人体正常值水平的比例为 14 9%和 2 2 0 % ,两组受试人群血清维生素A亚临床缺乏的发生率为 2 8 7%和 11 8%。此次调查结果为强化面粉人群干预试验提供了基础资料。
In order to observe the effect of fortified flour on human nutrition, we investigated the nutrition status and diet of 600 rural women in Weichang County, Hebei Province and 5 74 rural women in the suburbs of Lanzhou, Gansu Province. The body results showed that the subjects were generally in good condition. The incidence of overweight and obesity among rural women in Hebei Province was 281% and 82%, while in Gansu Province it was 31% and 82% respectively. The intakes of milk and dairy products, pulses and soy products, fish and shrimp and vegetables in both groups were lower than those recommended by Chinese residents in a balanced diet, and there was insufficient intake of micronutrients to varying degrees. The prevalence rates of anemia in rural women in Hebei and Gansu provinces were 13.8% and 23.4% respectively, and the serum zinc levels were 14.9% and 220.0% lower than the normal level in the human body. Serum vitamin A subclinical deficiency The incidence rates were 28.7% and 118%. The survey results provide the basic information for strengthening the intervention test of flour crowd.
