党的十八大以来,中央持续加大作风建设和反腐败工作的力度,对高端餐饮行业产生了较大的影响,过去依赖于公款消费的高端餐饮类企业受到严重的打击,由于公务类消费的剧减,高档的菜肴受到冷遇,一些大型的会议陆续撤单,致使高端餐饮类企业的营业收入滑坡严重。在国内高档餐饮发展十分低迷的同时,随着餐饮行业国际化、社会化及产业化进程不断地加快,面向工薪阶层的大众化的餐饮消费却显示出勃勃生机,成为未来餐饮行业发展的方向。本文简要介绍了高端餐饮面临的发展困境及其主要影响,深入阐述高端餐饮实现向大众消费转型的基本要求,研究提出了高端餐饮实现向大众消费转型的对策和建议。
Since the 18th CPC National Congress, the Central Government has continued to intensify its efforts in style construction and anti-corruption, which has had a significant impact on the high-end catering industry. The high-end restaurant and beverage enterprises that used to rely on public funds for their consumption suffered a serious blow in the past. The sharp decline in high-end cuisine, cold reception, some large-scale meetings one after another withdrawal, resulting in high-end restaurant business revenue decline significantly. At the same time as the development of domestic high-end food and beverage industry is very sluggish, as the internationalization, socialization and industrialization of the restaurant industry continue to accelerate, the popular restaurant consumption for working-class people has shown its vitality and has become the direction for the future development of the catering industry. This article briefly introduces the development dilemma and its main influence on high-end food and beverage. It also elaborates on the basic requirements for transforming high-end food and beverage to mass consumption, and puts forward the countermeasures and suggestions on transforming high-end food and beverage to mass consumption.
