目的了解龙岩市即食性食品的卫生状况。方法在新罗城区和漳平市区各大酒店、超市、农贸市场,随机采集六大类即食性食品(熟肉制品、焙烤食品、熟制米面制品、生食果品蔬菜、婴幼儿食品、调味酱)共1 7 6份进行食源性致病菌监测。结果 1 7 6份样品中共检出目的菌3 0株,分别为1株单核细胞增生李斯特菌,6株金黄色葡萄球菌,2 3株蜡样芽胞杆菌,检出率1 7.0%。结论龙岩市即食性食品存在着食源性致病菌污染,熟肉制品、焙烤食品主要存在金黄色葡萄球菌污染,熟制米面制品、婴幼儿食品主要存在蜡样芽胞杆菌污染,此类食品应为今后监测的工作重点,监督部门应提供有效的监管措施,避免食源性疾病的发生。
Objective To understand the health status of instant foods in Longyan. Methods Six categories of instant foods (cooked meat products, baked goods, cooked rice products, raw fruits and vegetables, infant foods and sauces) were randomly collected from the major hotels, supermarkets and farmers’ markets in Xinluo City and Zhangping urban areas. A total of 1 7 6 foodborne pathogens monitoring. Results A total of 30 strains of target bacteria were detected in 1 7 6 samples, including 1 Listeria monocytogenes, 6 Staphylococcus aureus and 23 Bacillus cereus, the detection rate was 1 7.0%. Conclusion There are food-borne pathogenic bacteria in instant foods in Longyan City. There are mainly contaminated Staphylococcus aureus in cooked meats and bakery products. There are mainly Bacillus cereus contamination in cooked rice products and infants food. For future monitoring priorities, supervision departments should provide effective regulatory measures to prevent food-borne diseases.
