香椿为株科植物香棒树上的嫩芽和嫩叶。俗称“香椿芽”、“香椿头”。我国是香椿的故乡,栽培历史悠久,庄子曾在《逍遥游》中夸张地说:“上古有大椿者,以八千岁为春,八千岁为秋”。栽培地区广泛,北至辽宁,南至两广,其中,以山东、安徽、河南、河北、陕西为主要产地。是我国独有一种树上佳蔬,远在唐朝就已被列为贡品了。种植品种有两大类:一是紫香椿,幼芽呈绛红色,富光泽,香味浓,油脂含量高;二是绿香椿,幼芽为绿色,香味较
