在酒店财务管理中,对成本的控制一直是酒店把握利润的中心。建立标准食谱卡是酒店行业目前所普遍采用的一种控制成本的手段。标准食谱卡将原料的选择、加工、配伍、烹调及其成品特点有机地集中在一起,可以更好地帮助统一生产标准,保证菜肴质量的稳定性。其对生产管理成本控制,采购、库存成本控制,原料成本控制等多个方面都有着重要的作用。
In the hotel financial management, the control of the cost has been the center of the hotel to grasp the profits. Establishing a standard recipe card is a commonly used method of cost control in the hospitality industry.
