目的了解开封市餐饮食品的安全状况,及早发现潜在的食品安全隐患,为开封市食品安全现状分析和监管提供准确信息。方法按照国家标准和2011年《中国食源性致病菌监测手册》对从开封市部分餐馆采集的5类共59份食品进行了4种食源性致病菌的监测。结果分离出致病菌7株,其中沙门氏菌4株、金黄色葡萄球菌3株,总检出率为11.86%。结论开封市餐饮食品存在一定程度的食源性致病菌污染,该现象应引起有关部门重视,加强监督监测,控制污染,以保护就餐者身体健康不受损害。
Objective To understand the safety status of catering food in Kaifeng City and find potential hidden dangers of food safety as early as possible so as to provide accurate information for the analysis and supervision of food safety status in Kaifeng. Methods According to the national standards and the 2011 Handbook of Foodborne Pathogenic Bacteria Surveillance in China, four foodborne pathogenic bacteria were monitored in 59 categories of 5 kinds of food in 5 categories collected from some restaurants in Kaifeng City. Results Seven pathogens were isolated, of which four were Salmonella and three were Staphylococcus aureus. The total detection rate was 11.86%. Conclusion There is a certain degree of food-borne pathogenic bacteria contamination in catering food in Kaifeng City. This phenomenon should be paid more attention by relevant departments, strengthen supervision and monitoring, and control pollution so as to protect diners’ health.
