黑猪的肉与普通猪肉吃起来并没有本质区别.而从营养角度来看,人们吃肉主要是从中获取蛋白质和脂肪.食物中的蛋白质不仅要看数量,还要看质量,也就是蛋白质的消化率和利用率.这主要与组成蛋白质的各类氨基酸含量和比例有关.而优质的脂肪应该含有较多的不饱和脂肪酸及人体必需脂肪酸(亚油酸和亚麻酸).
