分析了浙江省7个产地栽培的4个主要板栗品种共11个板栗样品的氨基酸组成和含量,同时探讨了其营养价值。对板栗中17种氨基酸的分析表明,板栗几乎含有所有人体必需氨基酸。分析毛板红和魁栗的氨基酸,其组成极相似,且两者在地域上的差异较品种本身差异大。在所研究的几个地域中,浙南地区的板栗氨基酸含量高,浙东、浙西和浙北的氨基酸含量较为接近。此外,所有被测样品中,日本栗的蛋白质营养价值最低,二次结实板栗产最高。
The amino acid composition and content of 11 chestnut samples from 4 main chestnut cultivars grown in 7 producing areas in Zhejiang Province were analyzed. The nutritional value was also discussed. Analysis of 17 amino acids in chestnut showed that chestnut contains almost all of the essential amino acids in the body. Analysis of the amino acids of Maohong and Kui Li, its composition is very similar, and the difference between the two geographical differences than the variety itself. Among the studied areas, the content of amino acids in chestnut in southern Zhejiang is high, and the amino acids in eastern Zhejiang, western Zhejiang and northern Zhejiang are similar. In addition, the protein content of Japanese chestnut was the lowest among all the samples tested, with the highest in second-compaction chestnut.
