目的了解义乌市面制食品中铝污染现状及居民铝暴露量情况,为食品监督及居民健康饮食提供指导。方法结合2009年义乌市市售面制食品中铝含量的监测数据,参考“2008年浙江省城乡居民营养与健康监测项目”农村居民面及其制品摄入量,评估居民面制食品中铝的暴露量。结果义乌市面制食品中铝含量均值为265.5 mg/kg,合格率为45.00%,其中油条合格率最低,仅为17.11%;面制食品的铝平均暴露量为每人每周1.40 mg,铝暴露量的P90值为每人每周3.76 mg。结论义乌市面制食品中油条、馒头等食品铝污染严重,居民面制食品的铝暴露量存在安全隐患,应切实加强面制食品监督管理。
Objective To understand the status of aluminum pollution in Yiwu pasta food and residents ’exposure to aluminum and provide guidance for food supervision and residents’ healthy diet. Methods According to the monitoring data of aluminum content in commercial noodles in 2009 in Yiwu city, and according to the “2008 rural and urban residents’ nutrition and health monitoring project in Zhejiang Province” Aluminum exposure. Results The average aluminum content of Yiwu noodles was 265.5 mg / kg, with a pass rate of 45.00%, of which the lowest pass rate was only 17.11%. The average aluminum exposure of noodles was 1.40 mg per person per week, The amount of P90 is 3.76 mg per person per week. Conclusions The aluminum in foodstuffs, such as fried dough sticks and steamed buns, in Yiwu city is seriously polluted. There is a potential safety hazard in the aluminum exposure of residents’ homemade foodstuffs. Supervision and management of flour products should be strengthened.
