美国杜克大学穆拉里·杜斯瓦教授称,每周吃二三欢咖喱,可降低患老年痴呆的概率。他们的研究发现,具有人类淀粉样蛋白的小鼠,在持续喂食咖喱12个月后,其脑内淀粉样蛋白明显减少。而同样的喂食咖喱,可预防小鼠脑部形成淀粉样蛋白。
