高中课本只介绍了淀粉是食物的重要成分,也是重要的工业原料,可用以制造葡萄糖和酒精。另介绍味精可由水解蛋白质制取。其实,如今蛋白质不再是制取味精的主要原料,现在大宗的味精是以淀粉为原料,采用发酵法制得的。就是没有介绍淀粉与味精之间的联系。教学时不妨给学生补充一点这方面的知识。下文对发酵法生产味精作了简单的介绍。
