INTRODUCTION Previous studies have demonstrated that the use of modified atmosphere storage can prolong the green ripening of tomato fruits grown in the open field in the UK and can then be quickly matured using chemical or high temperature methods (Thomas, Gray and Drew, 1977a, b). However, differences in weight loss between different breeds during storage and after-ripening are substantial, with a difference of 4-15% in about three months.
