目的了解北京市大兴区餐饮业卫生及餐具消毒状况,为加强监管提供依据。方法 2010年1—7月按照随机抽样的原则,选取部分中小型餐饮业、企业食堂各100户作为调查对象,采集餐具样品进行检测,按照《食(饮)具消毒卫生标准》(GB 14934-94)对结果进行分析。结果餐饮单位均有卫生许可证,从业人员健康证持证率为97.01%,餐具消毒合格率96.67%。小型饭馆合格率最低,为93.07%;学校食堂合格率最高,为100%。各类餐饮业餐具消毒合格率不同,差异有统计学意义(χ2=60.10,P<0.01)。结论应加强对经营者的卫生知识培训,加大监管部门对餐具消毒的监督力度,提高餐具的消毒合格率。
Objective To understand the sanitation and tableware disinfection status of catering industry in Daxing District of Beijing and provide the basis for strengthening supervision.
