研究了竹笋在 5℃ 和 10℃下,木质素含量、H2O2含量、超氧化物歧化酶(SOD)活性、过氧化氢酶(CAT)活性和过氧化物酶(POD)活性的相互关系和变化规律。结果表明,SOD、CAT和 POD 3种酶活性虽均呈先上升后下降趋势,但 H2O2呈持续上升趋势,由于 H2O2的积累,致使木质素含量不断增加。5℃的 SOD、POD活性和 H2O2含量均显著低于 10℃下的数值,5 ℃下木质素含量极显著低于 10℃下的数值。
The correlation and change of lignin content, H2O2 content, superoxide dismutase (SOD) activity, catalase (CAT) activity and peroxidase (POD) activity of bamboo shoots were studied at 5 ℃ and 10 ℃ law. The results showed that the activities of SOD, CAT and POD increased firstly and then decreased, but the H2O2 showed a continuous upward trend. Due to the accumulation of H2O2, the content of lignin increased continuously. The activities of SOD, POD and H2O2 at 5 ℃ were significantly lower than those at 10 ℃. The content of lignin at 5 ℃ was significantly lower than that at 10 ℃.
