:
通过对比发酵温度、 发酵容器、 原料是否堆黄和脱水等不同工艺条件下的发酵结果,并参考顶空固相微萃取-气相色谱-质谱法(SPME-GC-MS)分析传统杨庙雪菜的主要风味物质,研究杨庙雪菜低盐工业化生产工艺的可行性.试验感官评价结果表明,新鲜雪菜堆黄2 d,腌制盐度4%~6%,发酵时间21 d左右,pH值可达4.2以下.采用脱水冷冻储存工艺,解冻后较传统工艺发酵雪菜风味好,并能解决生产过程中异物控制及污水处理等问题.
