In the 1970s, a Japanese scientist discovered that some strains of Monascus spp. when they grew on rice might produce a certain secondary metabolite, known collectively as Monacolin K, which could effectively inhibit HMG-CoA reductase and had many bio-activities such as reducing the levels of TC (total cholesterol), TG (triglyceride), LDL (low density lipoprotein), and raising the level of HDL (high density lipoprotein), preventing the anti-AS (atherosclerotic) and so on[1~3], but the content in Monascus spp is extremely low, restricting the applications of red yeast rice and urging the researchers to seek for a lot of methods for enhancing the content of Monacolin K[4].
