山珍海味之所以脍炙人口,沁沏心脾,是因为其中含有少量的鲜味物质,学名叫L-谷氨酸氢钠和5′-肌甙酸二钠,又可叫老味精和新味精。化学上分属两种不同类型结构,分别出自生命基础物质中蛋白质和核酸降解后的基元分子。市上出售的味精即由这两种化合物组成。但它们却不是这两个类型化合物中味道最鲜的,只是由于经济、方便、副作用小等方面的考虑,才选择作为商品。科学研究不仅要认识自然,仿效自然,还要胜过自然。因构成鲜味的科学机理很复杂,一时还难以弄清,故目前还只能采用下述的归纳方法。
