目的:了解涉亚食品卫生情况,为赛事期间食品卫生保障提供科学依据。方法:对涉亚食品进行卫生学监测。结果:亚运城餐饮具及食品合格率分别为95.74%、87.43%,不合格的食品中均有大肠菌群超标,有5份样品同时检出致病菌,单增李斯特菌、O157:H7及沙门氏菌的检出率分别为1.55%、1.06%及0.43%。亚运指定接待饭店、集体送餐企业的餐饮具及各类食品合格率为92.91%,不合格样品中88.00%为大肠菌群超标。ATP及食品中心温度合格率分别为83.02%、84.98%。快速餐检中亚硝酸盐、甲醛、砷化物的合格率分别为99.15%、99.74%、99.96%。结论:食品生产加工过程中的交叉污染仍然是主要的污染途径,有关部门应重视;应尽快制定快速检测国家标准,以适应日益增多的大型活动公共卫生保障需要。
Objective: To understand the health situation of food in Asia and to provide a scientific basis for food hygiene protection during the competition. Methods: Hygiene monitoring of food related to Asia. Results: The passing rates of catering utensils and foodstuffs in Asian Games City were 95.74% and 87.43% respectively. All of the unqualified foods had excessive coliform bacteria. Five samples were also detected pathogens, Listeria monocytogenes, O157: H7 And Salmonella were 1.55%, 1.06% and 0.43% respectively. Asian Games designated reception hotel, collective delivery company catering equipment and various types of food pass rate of 92.91%, 88.00% of unqualified samples for coliform bacteria exceeded. ATP and food center temperature pass rates were 83.02%, 84.98%. Fast pass inspection of nitrite, formaldehyde, arsenide pass rates were 99.15%, 99.74%, 99.96%. Conclusion: Cross-contamination in the process of food production and processing is still the main route of pollution. Relevant departments should pay attention to it. Rapid national standards should be developed as soon as possible to meet the increasing public health security needs of large-scale activities.
