本文测定了厦门火烧屿养殖大黄鱼成、幼鱼肌肉中蛋白质、脂类和糖类等生化组份 ,并计算其比能值 ;分析了肌肉蛋白质中 1 7种常见氨基酸的含量。结果表明 :成鱼肌肉蛋白质占 1 8.9% (湿重比 ,下同 ) ,脂类为 3.1 1 % ,糖类为 1 .6 2 % ,水份占 75 .30 % ,灰份为 0 .95 %。比能值为 5 .98kJ/ g ,E/P值为 31 .6 2kJ/g。幼鱼肌肉中以上各项含量分别为 1 7.1 %、1 .6 1 %、1 .0 8%、79.0 6 %、1 .0 3%、4.87和 2 8.45kJ/ g;成、幼鱼肌肉蛋白质中 1 7种常见氨基酸含量丰富 ,分别为 1 5 3.5 9和 1 49.91 (×1 0 -3 m/m) ;必需氨基酸和半必需氨基酸含量较高 ,占总氨基酸的 5 1 .7% (成鱼 )和5 8.9% (幼鱼 )。
In this paper, we measured the biochemical composition of protein, lipid and carbohydrate in large yellow croaker cultured juvenile fish in Huoshaoyuan of Xiamen and calculated its specific energy. The contents of 17 kinds of common amino acids in muscle protein were analyzed.
