海参又名沙噀、海鼠、海男子,在生物学上属于棘皮动物海参纲。中国所产海参约有20余种可供食用,主要有刺参、方刺参、梅花参、乌参、黄玉参等。古人对海参的种类仅分为刺参和光参两类,如《本草从新》这样解释:“有刺者名刺参,无刺者名光参。”无论古人还是今人,视海参为高档烹饪原料者只认刺参。故本文所论述者,也以刺参为主。
