“美人菜心”是用扬州梅岭的青菜心加鱼茸、虾茸、海苔等制成的一道工艺菜。扬州城郊一年四季生产青菜,夏季长瘦长的青菜,叫鸡毛菜,秋冬春三季长矮棵胖肚的青菜叫“扬州青”。冬季的青菜最好吃,粗根、胖肚、叶青,特别是霜打后的青菜既嫩又甜味又鲜。可能因为四郊的土质不同,长出来的青菜嫩度也不一样。据传,南郊宝塔湾的青菜叶子上有七道叶脉,俗称七根筋,比较老;东郊大水湾的青菜有五根筋;只有北郊梅岭的青菜才
