烧酒指的是蒸馏酒,就是现代的汾酒、茅台、洋河大曲之类含高含率乙醇的酒。这种饮料,在元代以前,文献上的确少见。元代以后,特别是明代以后,中国各地都有,是常见、常饮的东西了。李时珍(1518—1593)说:“烧酒非古法也。自元时始创其法”。元初忽思慧《饮膳正要》(是一本叙述元朝宫廷饮食的书)称为阿拉吉酒;元,朱德润《轧赖吉酒赋》(以赋的体裁,叙述用蒸馏法以制烧酒)也用外来语来称这种酒,这无疑在元朝是新奇的东西了。阿拉
