目的全面了解2007-2014年桂林市餐饮行业餐具消毒现状,提高餐具消毒合格率,保障消费者的食用安全。方法采用大肠菌群快速检验纸片法,对桂林市餐饮行业的餐饮具消毒效果进行抽样监测并进行分析。结果 2007-2014年桂林市共监测样品5 578份,合格样品5 175份,合格率为96.44%;总监测12 090项次,合格11 122项次;检出大肠菌群356份,检出菌落总数75份,感官不合格6份,烷基(苯)磺酸钠不合格24份。结论桂林市餐饮具合格率较高,但是为了保证广大市民的饮食安全,仍需重点加强餐饮行业餐饮具消毒的监督监测。
Objective To comprehensively understand the status of tableware disinfection in catering industry in 2007-2014 in Guilin, raise the passing rate of tableware disinfection and ensure the safety of consumers. Methods The method of coliform rapid test paper was used to monitor and analyze the disinfection effect of tableware in Guilin food and beverage industry. Results A total of 5 578 samples and 5 175 qualified samples were obtained from 2007 to 2014 in Guilin. The pass rate was 96.44%. The total number of tests was 12 090 and 11 122 were qualified. A total of 356 samples of coliform were detected. The total number of 75, sensory unqualified 6, alkyl (benzene) sulfonate unqualified 24 copies. Conclusion Guilin high rate of qualified tableware, but in order to ensure the general public’s dietary safety, still need to focus on strengthening the restaurant catering supervision and monitoring of disinfection.
