目的了解青岛市食(饮)具集中消毒单位卫生现状调查,为规范集中消毒单位的生产经营活动,强化卫生监督管理,提出相应的建议和对策。方法 2012年根据《餐饮具集中消毒单位卫生监督规范》(试行)中管理要求对青岛市56家食(饮)具集中消毒单位进行现状调查,抽检对每家食(饮)具消毒单位消毒包装好的骨碟、小碗、茶杯、汤匙、酒杯各2套(10件),按照GB 14934-1994《食(饮)具消毒卫生标准》规定的方法检测大肠菌群。结果检测56家食(饮)具集中消毒单位样品560件,消毒食(饮)具卫生检测合格率为96.07%;选址合格率为80.36%;生产场所卫生合格率为69.64%;布局流程合格率为73.21%。结论青岛市56家食(饮)具集中消毒单位的整体卫生状况一般,需尽快建立食(饮)具许可规范制度,加强部门联动,切实保障人民群众饮食安全。
Objective To understand the status quo of the hygiene status quo of centralized disinfection units of food (drink) in Qingdao City. To standardize the production and business activities of centralized disinfection units and to strengthen the supervision and administration of hygiene, the corresponding suggestions and countermeasures were put forward. Methods According to the management requirements of “Hygiene Supervision Code for Centralized Disinfection Unit of Tablewares” (2012), a survey was conducted on the status quo of 56 centralized units for disinfection of food and drink in Qingdao City in 2012. Sampling was performed on each disinfection package Good bone plate, small bowl, cup, spoon, glass of the 2 sets (10), in accordance with GB 14934-1994 “food (drink) with a hygienic standard” method of detection of coliform bacteria. Results 56 samples of food (drinking) with a centralized disinfection unit of 560 samples were tested. The pass rate of disinfection food (drinking) with hygienic test was 96.07%; the passing rate of site selection was 80.36%; the sanitation pass rate of production site was 69.64% The rate was 73.21%. Conclusions The overall hygiene status of 56 food and beverage intensive disinfection units in Qingdao is general. It is necessary to set up a food and beverage (drinking) licensing system as soon as possible to strengthen the linkage between departments and ensure people’s food safety.
