烤鸭是华北地区的一道名菜,尤其以北京烤鸭最为著名,是中外游客到了北京不容错过的美食。烤好的烤鸭色泽红亮,香气扑鼻。吃法是将鸭肉片成“片片带皮、片片有肉”的薄片,加上葱白和甜面酱,再裹上荷叶饼。鸭肉外焦里嫩,别有一番风味。甜面酱,是华北地区常用的调味品和佐餐品。甜面酱是用面粉加水与曲霉,经过发酵制成的。面粉中的淀粉被曲霉分解为糖,因此吃起来有甜味。这是山东大葱的葱白。山东大葱个大茎粗,葱臭味较少,葱白更是带有一丝甜味,适合直接生吃。
