When the monolayers of lipids at the gas-liquid interface are compressed, the monolayer undergoes a series of phase transitions as the molecular spacing shrinks. The nucleation and growth of the new phase can be observed by fluorescence microscopy. Due to the two-dimensional nature of the monolayer, experimental observations in this system are particularly important for testing and developing two-dimensional interfacial growth theory. This article summarizes the experimental phenomena discovered by our group in cooperation with relevant institutes in recent years and the series of researches on its growth mechanism. The content includes the observation and analysis of nucleation in the monolayer system, interfacial stability, dendrite growth, morphological evolution and so on.
