广西巴马县地处山区,长寿老人较多.对50名90岁以上老人的膳食情况调查,发现有以下特点:(一)主食为玉米掺大米及各种豆类,加工较粗,粗粮细作.这种谷类米豆相搭配的主食,较合理地利用了蛋白质的互补作用,从而提高了食物效价;粮食粗加工,维生素、矿物质及食物纤维素耗损较少;粗粮细作(例如磨粉煮糊),提高了消化吸收率.
