目的了解农村厨师食品安全知识、态度及行为状况,为加强农村食品安全管理提供依据。方法 2014年对313名农村厨师的食品安全知识、态度及行为进行问卷调查。结果 313名农村厨师食品安全知识总知晓率为59.30%,食品安全态度信念总持有率为73.48%,食品安全行为形成率为57.67%。不同性别、年龄、文化程度和技艺获得途径在食品安全知识知晓率差异有统计学意义(P<0.05),不同年龄和从业年限者食品安全态度信念和食品安全行为差异均无统计学意义(P>0.05)。结论农村厨师食品安全知识知晓率、食品安全行为形成率较低,必须加强健康教育,普及食品安全知识,提高食品安全行为。
Objective To understand the food safety knowledge, attitude and behavior of chefs in rural areas and provide basis for strengthening the food safety management in rural areas. Methods In 2014, 313 rural chefs were surveyed about food safety knowledge, attitude and behavior. Results The total knowledge rate of food safety in 313 rural chefs was 59.30%, that of food safety attitude was 73.48%, and that of food safety behavior was 57.67%. There were significant differences in the awareness rate of food safety knowledge among different genders, ages, educational levels and skills acquisition (P <0.05), and there was no significant difference in food safety attitude and food safety behavior among different ages and working years (P > 0.05). Conclusion Rural chef awareness rate of food safety knowledge, food safety behavior formation rate is low, we must strengthen health education, popularize food safety knowledge and improve food safety behavior.
