目的评估深圳居民膳食中镉暴露水平。方法抽样监测深圳市23类5 368份食品镉含量,结合深圳市2008年膳食营养状况调查数据,采用点评估方法对深圳居民进行膳食镉的暴露评估。结果深圳居民每月膳食中镉平均暴露量为35.54μg/kg Bw,占PTWI的142.16%;每月膳食中镉暴露量中位数为4.37μg/kg Bw,占PTWI的17.48%;每月膳食中镉暴露量(膳食摄入量P_(90)、极端P_(90))分别为75.51μg/kg Bw和240.98μg/kg Bw,分别占PTWI的302.04%和963.92%。深圳居民膳食中镉暴露的主要来源食品是淡水鱼、粮食类食品、畜肉类食品及蔬菜类食品,占每月膳食中镉平均暴露量的73.88%。结论深圳居民膳食存在镉过量暴露的风险,应进一步开展深圳居民膳食镉暴露的概率评估。
Objective To assess the dietary exposure to cadmium in Shenzhen residents. Methods The cadmium content of 5 368 foods in 23 categories of Shenzhen was sampled and monitored. According to the survey data of dietary nutrition in 2008 in Shenzhen City, the assessment of dietary cadmium exposure of Shenzhen residents was carried out by point assessment. Results The average monthly exposure to cadmium in residents in Shenzhen was 35.54μg / kg Bw, accounting for 142.16% of the PTWI. The median monthly exposure to cadmium was 4.37μg / kg Bw, accounting for 17.48% of PTWI. The monthly diet Cadmium exposure (dietary intake P_ (90), extreme P_ (90)) were 75.51 μg / kg Bw and 240.98 μg / kg Bw respectively, accounting for 302.04% and 963.92% of PTWI, respectively. The main sources of dietary exposure to cadmium in Shenzhen residents are freshwater fish, foodstuffs, meat and veterinary foods, accounting for 73.88% of the average monthly exposure to cadmium in the diet. Conclusions There is a risk of excessive exposure of cadmium to dietary intake in Shenzhen residents, and the probability of dietary cadmium exposure in Shenzhen residents should be further evaluated.
