Recently Dr. John Lapma, author of the American Kitchen Doctor’s Reference, put forward the view that watermelon is best placed at room temperature. Lycopene and β-carotene contained in watermelon are 40% and 139% higher than icy watermelon at room temperature, and these nutrients are components of anti-cancer anti-oxidants.
