目的对葫芦岛市区各类餐馆服务场所的早餐类食品铝污染情况进行抽样检测,为针对性的开展食品卫生监督监测工作提供依据。方法对抽检的3 0份样品,按照国家标准GB/T 5009.182-20 03《面制仪器中铝的测定》执行,即铬天青比色法,卫生学评价按《食品中污染物限量》GB2 762-2 005(面制食品中铝限量指标)进行。结果在抽检的30件市售早餐食品中,油饼中铝含量符合国家标准的为88.89%;丸子符合国家标准的为66.67%;油条铝含量均不符合国家卫生标准。抽检食品中的铝含量为0~653.99mg/kg,以油条中的铝含量最高,其含量范围为1 34.69~653.99mg/kg。结论葫芦岛市市售早餐食品中铝含量确有超标情况存在,尤其以油条中铝残留量超标严重,对人体健康构成威胁,应引起有关部门高度重视,进一步加强食品安全监管力度,消除安全隐患。
Objective To carry out sampling and testing on the aluminum contamination of breakfast foods in all kinds of restaurants in Huludao urban area to provide the basis for targeted supervision and monitoring of food hygiene. Methods A total of 30 samples were tested according to the national standard GB / T 5009.182-20 03 Determination of Aluminum in Surface-made Instruments, namely chrome azurol colorimetry. Hygienic evaluation was based on “Limit of Contaminants in Food” GB2 762-2 005 (aluminum products in the food limit indicators). Results Among 30 commercially available breakfast foods, the content of aluminum in the cake was 88.89% in line with the national standard; the balls were 66.67% in line with the national standard; the aluminum content of the fried sticks did not meet the national health standards. The content of aluminum in the sampling food was 0-653.99mg / kg, and the content of aluminum in the fritters was the highest, which ranged from 134.69 to 653.99mg / kg. Conclusion The content of aluminum in commercial breakfast foods does exist in Huludao City. In particular, the excessive residues of aluminum in fried dough sticks lead to the serious threat to human health, which should be paid more attention by the relevant departments, further strengthen the food safety regulation and eliminate the potential safety hazard .
