目的为掌握邢台市市区成年居民的膳食结构和营养成分摄入状况,积累膳食结构的基本资料,进行膳食营养调查,改变居民的膳食结构和营养状况,提出大众营养处方。方法采取24h膳食回顾法结合记账法、称重法,收集邢台市的25个居民小区、10个城中村的2000名年龄在20~60岁的成年被调查者5d(连续5周,每个星期三为调查日)的膳食摄入情况,对照中国居民膳食营养素参考摄入量进行分析。结果被调查人群的膳食结构以碳水化合物的谷物为主,含蛋白质和脂肪丰富的畜禽肉类摄入量偏高,粗纤维和微量元素钙、铁、维生素E等摄入量不足,杂粮摄入偏少,食物中的三大营养素摄入不均衡、机体供能不平衡。结论邢台市市区成年居民的膳食结构接近正常,应该加强粗纤维食物和钙、铁等微量元素的摄入;适当减少畜禽肉类的摄入量。
Objective To understand the dietary patterns and nutrient intake of adult residents in urban areas of Xingtai, accumulate the basic information of dietary structure, investigate the dietary nutrition, change the dietary structure and nutritional status of residents, and put forward the general nutrition prescription. Methods 24-hour dietary review combined with the accounting method and weighing method was used to collect 25 residential areas in Xingtai City and 2,000 adults aged 20-60 years from 10 villages in the city for 5 days Wednesday for the survey day) of the dietary intake, control reference intake of Chinese residents dietary nutrients for analysis. Results The dietary structure of the surveyed population mainly consisted of carbohydrates, with high intake of protein and fat-rich livestock and poultry meat, inadequate intake of crude fiber and trace elements such as calcium, iron and vitamin E, Into partial less food intake of the three major nutrients imbalance in the body for energy imbalance. Conclusion The dietary structure of adult residents in urban area of Xingtai City is close to normal. The intake of crude fiber foods and trace elements such as calcium and iron should be strengthened. The intake of livestock and poultry meat should be reduced appropriately.
