以酸枣皮为原料,用30%乙醇溶液浸提得酸枣皮天然色素,并对其理化性质进行了研究.结果显示,该色素在弱酸性及中性条件下,具有良好的稳定性,在食品工业中有一定的开发利用价值.
Taking jujube skin as raw material, the natural pigment of jujube skin was extracted with 30% ethanol solution, and its physicochemical properties were studied. The results show that the pigment has good stability in the weak acid and neutral conditions, and has certain development and utilization value in the food industry.
