试验了４种从干辣椒中提取辣椒素的方法；ＨＰＬＣ色谱分析及定量测定辣椒素提取率表明，丙酮温浸提取法最佳。
Four methods for extracting capsaicin from dried chilli peppers were tested. HPLC chromatographic analysis and quantitative determination of capsaicin extraction showed that acetone warm leaching extraction method was the best.
