目的了解邯郸市2006-2013年食品安全风险监测中食品添加剂的污染水平和趋势。方法利用GB/T 5009-2003《食品卫生检验方法理化部分》检测方法、《食品中化学污染物及有害因素监测操作程序》对所采集样品进行检测,统计数据,分析2006-2013年食品添加剂污染状况。结果二氧化硫超标率11.4%,超标现象严重的食品为蜜饯;亚硝酸盐阳性率最高为84.4%,但超标现象并不严重。安赛蜜的合格率99.0%,其超标的样品也为蜜饯。合成色素的阳性率、超标率都很低。结论邯郸市2006-2013年食品添加剂监测数据显示,食品添加剂的使用仍然存在问题。蜜饯、开心果、食用菌超标严重,应加强这三类食品中添加剂的监督监测管理;应不断完善食品添加剂监测方法和制度;监管食品添加剂的职能部门应加强对食品添加剂生产企业和食品加工企业的监督管理,使人们能够吃上安全放心的食品。
Objective To understand the level and trend of food additives contamination in Handan food safety risk monitoring from 2006 to 2013. Methods The method of GB / T 5009-2003 Physical and Chemical Testing of Food Hygienic Testing Method was used to detect and collect the collected samples from the Operating Procedures of Chemical Contaminants and Hazardous Factors Monitoring in Foodstuffs. The data of the contamination of food additives in 2006-2013 situation. Results The exceeding standard rate of sulfur dioxide was 11.4%, and the food with serious over standard phenomenon was candied fruit. The highest positive rate of nitrite was 84.4%, but the excessive standard phenomenon was not serious. Acesulfame qualified rate of 99.0%, the excessive samples for the candied fruit. The positive rate of synthetic pigment, excessive rates are very low. Conclusion Handan food additive monitoring data from 2006 to 2013 show that there are still problems with the use of food additives. Candied fruit, pistachios, edible fungi exceeded the standard should be to strengthen the supervision and monitoring of these three types of food additives monitoring; should continue to improve food additives monitoring methods and systems; supervision of food additives functional departments should strengthen the food additives manufacturing enterprises and food processing enterprises Supervision and management, so that people can eat safe and secure food.
