目的了解江门市区2004~2009年食品中沙门菌、金黄色葡萄球菌、单增李斯特菌(Lm)、副溶血性弧菌及肠出血性大肠埃希菌(EHEC)O157:H7的污染状况,确定可能污染上述致病菌的高危食品,为食源性疾病监测工作提供科学依据。方法依据国标方法,并按《广东省食源性致病菌监测计划》检测技术要求,对采集的食品样本分别进行沙门菌、金黄色葡萄球菌、Lm、副溶血性弧菌及EHECO157:H7菌分离和生化及血清学鉴定,对结果作统计分析。结果从12类908份食品中,共检出致病菌72株,总检出阳性率为7.93%。其中金黄色葡萄球菌检出17株,检出率3.82%(17/444);其次沙门菌检出30株,检出率为3.30%(30/908);Lm检出23株,检出率为2.53%(30/908);副溶血性弧菌检出2株,检出率0.45%(2/444);未检出EHECO157:H7。以凉拌菜、各种肉类和非定型包装熟肉污染较为严重。结论应加强凉拌菜、各种肉类和非定型包装熟肉食品食源性致病菌污染的监测。
Objective To understand the contamination status of Salmonella, Staphylococcus aureus, Listeria monocytogenes (Lm), Vibrio parahaemolyticus and enterohemorrhagic Escherichia coli (EHEC) O157: H7 in food from 2004 to 2009 in Jiangmen City. , Identify high-risk foods that may contaminate the pathogens mentioned above, and provide a scientific basis for monitoring food-borne diseases. Methods According to the national standard method and according to the technical requirements of “foodborne pathogenic bacteria monitoring plan of Guangdong Province”, the collected food samples were respectively subjected to Salmonella, Staphylococcus aureus, Lm, Vibrio parahaemolyticus and EHECO157: H7 Separation and biochemical and serological identification, the results for statistical analysis. Results A total of 72 pathogenic bacteria were detected in 12 types of 908 food samples, with a total positive rate of 7.93%. Among them, 17 were detected by Staphylococcus aureus, the detection rate was 3.82% (17/444); followed by Salmonella detected 30 strains, the detection rate was 3.30% (30/908); Lm detected 23 strains, the detection rate Was 2.53% (30/908). Two strains of Vibrio parahaemolyticus were detected, the detection rate was 0.45% (2/444). EHECO157: H7 was not detected. Cold salad, all kinds of meat and non-stereotypes packaging cooked meat more serious pollution. Conclusion The monitoring of contamination of food-borne pathogenic bacteria in salad dressing, all kinds of meat and non-shape packed cooked meat should be strengthened.
