大蒜在植物学分类上属百合科、葱属,为多年生宿根植物,在生产上作为一年或两年栽培。大蒜的茎退化成扁平的茎盘,通过生长发育,地下鳞茎生长成蒜头。但大蒜植株在生长发育过程中,在0—4℃的低温条件下形成花芽,随着花梗的伸长,花蕾迅速露出叶鞘,形成蒜苔。在蒜苔顶端花序丛间生长着许多小的气生鳞茎,形成小蒜瓣,群众称为“天蒜”。试验证明,利用气生鳞茎作种,对发展大蒜生产,有许多好处。①繁殖系数高。用大蒜作种繁殖系数在1:6至1:10之间;而用气生鳞茎作种,繁殖系
