马蹄[Eleocharis tuberosus(Roxb.)Schult],一名荸荠。桂林栽培的马蹄,球茎个形较大,皮薄,肉质细嫩,甘甜清脆,果渣少,是比较优良的品种。也是桂林传统的出口商品。可生食、熟食、制作罐头、酿酒、加工马蹄粉或做蜜饯。耐贮藏,可保存到翌年四、五月份,有利于增加桂林水果淡季的供应。马蹄也可药用,主治热病伤津烦渴,小便不利等。 桂林郊区的农民有栽培马蹄的习惯,多是利用水田种植,并施用比较大量的农家肥做基肥,生长良好,产量也不低。为了了解桂林马蹄的质量情况,我们对桂林较为有名的老产地卫家度和东山等地生产的马蹄,以及施用不同种类的肥料种植出来的马蹄,进行了一些营养
