经考查合成没食子酸高级烷醇酯的最佳工艺条件为：ＯＧ（没食子酸辛酯）酸醇摩尔比１：１．２；酸催化剂摩尔比１：０．１４～０．１９；反应温度１２３～１２６℃；反应时间９小时。ＤＧ（没食子酸十二烷醇酯）酸醇摩尔比１：１．２１酸催化剂摩尔比１：０．０５８～０．１４；反应温度１２４～１２８℃；反应时间１４小时。它们在猪油中的抗氧化效能十分接近，ＤＧ稍强。
