云南食用菌资源居全国之首,现已知的有350多种。分布广泛,品种繁多,含有多种营养物质及微量元素,从营养的观点看,是一类可以用来生产食用蛋白的经济有效的微生物资源。为了进一步了解其营养价值及药用价值,我们对人工栽培的侧耳Pleurotusostreatus、愉黄蘑Pleurotus citrinopil-eatus、香菇Lentinus edodes,及天然野生的青头菌Russula virescens、鸡油菌Cantharellus cibarius、干巴菌Sparassiscrispa、见手青Boletus rubellus、鸡纵花Mycena microcarpna、黄赖头Leccinum
